About the Event


A Kitchen Workshop

Following the success of our spring workshops, we’re opening the doors to the BDQ kitchen again in summer. If you want to get into fermentation, there’s no better place to start - yeast and fermentation are central to everything we do. Combine that with a love of wood fire and local produce and you’ll have a pretty good idea of what we’re all about.

These aren't formal "classes"—they’re hands-on workshops, working around the huge marble kitchen table, using the wood fires. I’ll share what I’ve learnt over the last decades and what we do here, from running the wood-fire to the fermentation shelf.

Whether you’re a total beginner or a cook looking to troubleshoot a flat dough, a festering jar, or don’t know where to start with kimchi come join us.

These are three sessions designed to give you a detailed overview of fermentation in a practical
