Here in the Aude, we’re surrounded by beautiful Walnut Trees, and in Autumn we’re inundated with their bounty. But did you know that the true magic of the Walnut Tree is when the nuts are still green?
The window to harvest green walnuts is incredibly short. Once they harden, the magic is gone. If you’d like to make the legendary local Vin de Noix liqueur & fill your cupboards with traditional Pickled Walnuts, this is your last chance until next year.
